 I did not expect a single evening to change how I would remember this trip, but it did. Sometimes, travel gives you something quiet and lasting, not through landmarks or schedules, but through a moment that allows you to truly feel where you are.
This chef’s table experience at Zamia by Itinerante in Las Terrenas was one of those moments. 
It was not just a dinner. It was a story, a lesson, and a memory I know will stay with me for years.

I travel often to the Dominican Republic, and to many other countries as well. Over time, you begin to realize that what truly stays with you is not just the places you visit, but the moments that create connection. The ones where you feel invited in rather than entertained. This evening was exactly that.

From the moment we arrived, there was a quiet sense that something special was unfolding. The setting felt intimate and thoughtful, tucked away from the usual paths, surrounded by nature and warmth. It did not feel like walking into a restaurant. 
It felt like being welcomed into a home. A true Dominican home, grounded, open, and alive with presence. 
That alone set the tone for the night.

Alfredo and Rebecca welcomed us with ease and genuine kindness, the kind that immediately softens your shoulders and slows your breath. We were not treated like customers, but like friends invited to share an evening together. The outdoor setting was simple yet beautiful.

Around us, life was happening. The trees and bushes carried the sounds of birds settling in for the evening. From a distance came soft Dominican music, laughter, and voices blending into that familiar rhythm so common in Caribbean and Latin cultures. 
It was not noise, but music in itself. A background hum of joy, community, and ease. It felt alive, yet calm.

  As the meal began, it became clear that this experience was about far more than food. Each course came with a story. 
We learned about Dominican ingredients, local herbs, traditional flavors, and how they are grown, used, and respected.
Some of the courses were finished with edible flowers, used thoughtfully and naturally, not as decoration for show, but as part of the flavour and story on the plate. 
The ingredients were indigenous or locally sourced, prepared with refined techniques that honoured tradition while bringing something modern and unexpected to the table.

This was not a meal designed for comfort or familiarity, but for curiosity. It invited openness. It asked you to taste without judgment and to trust the process.
 Flavours unfolded slowly and thoughtfully. Even simple elements felt elevated. Roasted coco, which I tried for the first time, was something that could easily become a daily snack for me.

The service throughout the evening was impeccable. Attentive without intrusion. Perfectly paced. Thoughtful in every detail. 
My husband and I found ourselves fully present, not reaching for our phones, not thinking about what was next, but simply being there. Time softened. Conversation flowed. The world outside the table faded gently into the background.

What made this evening unforgettable was the combination of learning, tasting, and connecting. Spending time in a real Dominican home, surrounded by stories, flavors, nature, and sound, created a depth that no typical dining experience could replicate. It felt human. Rooted. Honest.

This was more than a highlight of our trip. It was one of those experiences that quietly reminds you why you travel in the first place. To learn. To feel. To connect.

I've always felt there must be more to life than just going to school, working, cooking, and cleaning. 
Growing up, this was my mother’s routine, and for a long time, I thought it was mine to follow as well. I believed life was predetermined—shaped by social status and the expectations of those around us. Our family didn’t hold any special status, and I struggled with feelings of inadequacy. I thought of myself as ugly, too short, too heavy—frankly, I didn't like myself much at all.

But as I grew older, I began to feel a growing discomfort. I knew deep down that I wanted something different from life, something more. It took me years to understand that we are often shaped by others' expectations—parents, teachers, society—and that we can lose our true identity when we conform to someone else's vision of who we should be. I fell into that trap, and it led to poor decisions and a deep yearning for love, attention, and happiness. But no matter how hard I searched, I couldn’t find it outside of myself.

Growing up in Eastern Europe had a profound effect on my belief system. I didn’t feel like I had a voice, and when my family immigrated to Canada, that feeling intensified. I didn’t speak English, and the frustration of not being able to express myself made me feel even more lost and isolated. I struggled to belong, feeling like I didn’t fit in anywhere, and that emotional rollercoaster was slowly breaking me down. I had no idea who I was or what my purpose was on this planet.

To make matters worse, as I entered menopause, my health started to deteriorate. I felt sore, exhausted, uncomfortable, and trapped in a body that wasn’t listening to me. I was desperate for relief. Does any of this sound familiar?

For years, I struggled to reconnect with my true self, but I never gave up. I knew in my heart that the key to peace, happiness, and health was finding and following my own path. After countless books, webinars, and guidance from holistic teachers and coaches, I finally realized something powerful: I could rewrite my own story. I wasn’t stuck with the old programming I had absorbed—I could change the narrative.

Was it easy? Absolutely not. But the journey was worth every step. Rebuilding myself from the inside out, letting go of limiting beliefs, and embracing my body—just as it is—allowed me to finally live a life of joy and fulfillment. I’m still a work in progress, but that’s part of the beauty of life: it’s always evolving.
Through self-care, self-love, and total acceptance of who I am, I gained the confidence and courage to live a life of true freedom. Now, I am the author of my own fairy tale, fully owning my story and loving myself along the way. It’s the bravest thing I’ve ever done.
